Quinoa with vegetables


1 white onion medium size

1 clove garlic

6 spoons olive oil

350 grams of Quinoa White Rewild

2 ripe medium tomatoes

1 small carrot

1 small zucchini

1 small aubergine

1 small yellow pepper


Doses for

Chop finely the onion and garlic and fry slightly in 6 spoons of olive oil. Meanwhile dice the tomatoes and peeled carrot and zucchini, aubergine and peppers previously washed. Add the vegetables to the onion and garlic wilted and add salt to taste. Cook for about 20 minutes and the vegetables over high heat, occasionally adding a ladle of water, being careful not to attach everything to the pan (we recommend the use of a non-stick wok).

Meanwhile bring to boil 2 liters of lightly salted water. Add 350 grams of Quinoa White Rewild and cook for about 20 minutes.

Drain the quinoa and reverse it in the wok along with vegetables, stir and serve hot.
